To disassemble something, right click it and select "disassemble" or hold alt+left click. There will be text indicating if it's possible to learn the recipe or not. If, upon disassembly, you get a message that says "Critical Success" it means you have learned the recipe. You may need to relog to see this recipe in your crafting list.
